Chapter Summary

This chapter discusses the quest for delicious food mirrored the social and political changes that Japan underwent during the final decade of the nineteenth century and first few decades of the twentieth century. The chapter also discusses about health, hygiene and food, imperial dining, and imperialism and food, in Japan. In the last three decades of the nineteenth century and beyond, as Japan started to flex its imperializing muscles, the concept of dining and national cuisine changed, with consequences for the further development of ramen. Japan's new stature as a colonial power was reflected in its cuisine, which absorbed influences from West and East, both of which had impressive culinary cultures. Japan was becoming more multi-ethnic, with large East Asian populations joining masses of day laborers and the urban poor to create a new public demand for cheap eateries.
