Chapter Summary

This index of Slurp! A Social and Culinary History of Ramen - Japan's Favorite Noodle Soup presents a list of terms and concepts that occur in the book. The terms are arranged in alphabetical order. A bowl of ramen noodle soup is not merely a wad of noodles served in a flavorsome broth with a variety of toppings and seasonings: it is also a microcosm of East Asian history, and as such a most delicious amalgamation of lowbrow and highbrow. Writing about ramen opens up a unique perspective on the history of Japan, and researching ramen has allowed me to combine the pleasures of the table (or ramen shop) with the joy of examining the past.

Keywords: culinary history; Japan; ramen noodle soup
