The labellum of the Eichhornia flower when young contains both chlorophyll and carotenoids at its centre. As it reaches maturity chlorophyll disappears with a concomitant synthesis of more carotenoids at the centre and anthocyanins in the regions around it. The carotenes are identified as α- and β-carotenes and the anthocyanins as malvidin and cyanidin.
